Well hello, there!

Just to prove that I still know how to blog, I'd like to share a recipe I made the other day!

Cheesy BBQ Chicken Cornbread Bake

1-1/4 cups all-purpose flour
3/4 cup corn meal
1/4 cup sugar
2 teaspoons baking powder
1/2 teaspoon salt (optional)
1 cup milk
1/4 cup vegetable oil
1 egg, beaten
1-2 cups shredded chicken
1/2 bottle BBQ sauce
1 cup cheese

Heat oven to 400° F. Grease 8 or 9-inch pan. Combine dry ingredients. Stir in milk, oil and egg, mixing just until dry ingredients are moistened.

Pour batter into prepared pan. Bake 20 to 25 minutes or until golden. While baking, mix shredded chicken and BBQ sauce together.

Pull finished cornbread out, pile on chicken, sprinkle on cheese, and heat again until cheese is melted and chicken is hot, about 5-10 mins.

I served with a can of black beans, heated in a saucepan with cumin, pepper, some red pepper I dehydrated this summer, onion and garlic powder. Quick and simple!
