94 Degrees? Mosquitoes? Humidity? It must be summer!

I don't know about your neck of the woods, but here in southwest Michigan, it's H-O-T, folks!

Do you have central air? Lots of fans? An indoor sprinkler system you can activate? What are you doing to beat the heat?

I made most of today's dinner at 10:30 last night, when it was still moderately cool in the kitchen. All that's left tonight is to grab some ice from the gas station and turn the stovetop on briefly to cook the chicken.

Here's my hot weather menu:

Chicken Tenderloins Marinated in Italian Dressing
The Best Macaroni Salad Ever 
Hummus and Pita Chips
Lemonade

Note: The macaroni salad is a Pioneer Woman recipe, and is indeed very delicious, but be careful, it's dangerous to make. I was mixing up the pickle juice, seasonings, vinegar and mayo and splatted some right in my eye and boy howdy, did it hurt. Not like the time I was making blueberry bars and flaming blueberry splatted into my eye, but close. And for the record, the blueberries that splatted me that time weren't really flaming, but my 15 year-old stepdaughter witnessed the incident and embellished it later when she told everyone.

"It was horrible! Kristen was stirring the pot all unsuspectingly, and PLOOM, this glob of flaming blueberries exploded right in her eye!"


I should have played along and got an eye patch.
